Cold Extraction

Castruriali is produced using the traditional method of Cold Extraction, ensuring the preservation of the natural flavours, aromas and health benefits of the olives.

Cold extraction involves crushing the olives into a paste and then slowly pressing them at temperatures below 27°C (80°F), without the use of excessive heat or chemicals.

This gentle process safeguards the integrity of the oil, retaining its rich nutritional profile, including essential vitamins, antioxidants and polyphenols.
