The Sicilian winter salad — blood oranges, shaved fennel and olives, dressed simply in oil and their own juice.
Ingredients
- 3 blood oranges
- 1 fennel bulb
- Handful black olives
- 3 tbsp Castruriali EVOO
- Red onion, mint, black pepper
Method
- Peel and slice the oranges into rounds, catching the juice.
- Shave the fennel paper-thin.
- Layer with olives and slivers of red onion.
- Whisk the orange juice with Castruriali oil and pour over; finish with mint and pepper.
